ingredients
200 g flour (mix of 2/3 bread flour & 1/3 wholemeal flour, or 120 g flour and 80g semolina)
100 g cold butter
60 g egg (about 1 medium-large egg - add milk if egg is below 60g)

1 tsp salt
1 pinch pepper
method
--> with food processor
put flour mix in machine
add cold butter in small pieces
add egg (and milk if necessary)
add salt & pepper
pulse until the mixture starts to resembles breadcrumbs
take out of machine
form a dough ball, wrap in cling wrap
leave in fridge for at least 1 hour
--> without food processor
put flour mix on chopping board and make a dent in the centre
add cold butter in small pieces into the dent
add egg (and milk if necessary)
add salt & pepper
with a big knife, hack the ingredients until the mix resembles breadcrumbs
knead for as short time as possible into dough
form a dough ball, wrap in cling wrap
leave in fridge for at least 1 hour
