shortcrust pastry

ingredients

200 g flour (mix of 2/3 bread flour & 1/3 wholemeal flour, or 120 g flour and 80g semolina)

100 g cold butter

60 g egg (about 1 medium-large egg - add milk if egg is below 60g)

1 tsp salt

1 pinch pepper

method

--> with food processor

  1. put flour mix in machine

  2. add cold butter in small pieces

  3. add egg (and milk if necessary)

  4. add salt & pepper

  5. pulse until the mixture starts to resembles breadcrumbs

  6. take out of machine

  7. form a dough ball, wrap in cling wrap

  8. leave in fridge for at least 1 hour


--> without food processor

  1. put flour mix on chopping board and make a dent in the centre

  2. add cold butter in small pieces into the dent

  3. add egg (and milk if necessary)

  4. add salt & pepper

  5. with a big knife, hack the ingredients until the mix resembles breadcrumbs

  6. knead for as short time as possible into dough

  7. form a dough ball, wrap in cling wrap

  8. leave in fridge for at least 1 hour
