ingredients
230 g bread flour (mix of 2/3 bread flour & 1/3 wholemeal flour)
140 g rye flour
130 g semolina
190 ml water (30 degree C)
190 ml milk

11 g yeast
2 tsp salt
2 tsp sugar
15 ml olive oil
15 ml balsamico vinegar
method
--> dough
put dry ingredients ( flour, salt and yeast) in a bowl
mix water, milk, olive oil, balsamico
mix by machine for 15 mins
proof for minimum 2 hr
put into baskets
proof for 1 hr
put on baking blech
(let proof for 0.5 hr)
cut bread
preheat oven to 220 ºC
bake for around 25-30 minutes at 220 ºC
