carrot soup

ingredients

400 g carrot

1 large onion

1 med tomato

1 small red apple

1 slice garlic

1000 ml vegetable stock

100 ml (aromatic) white wine

100 ml cooking / whipping cream

50 g butter

1 tsp balsamico vinegar

1 tsp unrefined brown sugar

1 tsp coarse ground pepper

1 tsp ground allspice [piment]

1 tsp chives

method

  1. finely dice carrot, onion, garlic and tomato

  2. gently sauté onion, garlic, brown sugar, pepper and allspice with little olive oil and over low heat for about 10 minutes

  3. add carrot, tomato and balsamico vinegar and gently sauté for about 5 minutes

  4. deglaze with wine

  5. add stock

  6. let simmer over slow - medium heat for 30 minutes

  7. peel, de-core and finely dice apple and add to stock

  8. add cream and butter

  9. blend with blended stick until frosty smooth

  10. garnish with finely diced chives
